Chicken Cooked in Wine is one of my favorite one pot Italian recipes to make. The chicken absorbs all the delicious flavor of the wine and herbs. This dish is simple to make and goes great with a grilled polenta or garlic mashed potatoes. Pollo al Vin Cotto or Coq au Vin in French, is a traditional recipe. I love anything that involves slow braising of meats. Braising is one of the most rustic techniques in Italian cooking.
This is comfort food at its best. It’s perfect for a private family meal or for entertaining a few friends. You could also replace the chicken with a pork, beef, short ribs or veal shanks using the same ingredients. Each one tastes different and each one is equally delicious. Enjoy this
Chicken Cooked in Wine recipe. You won‘t regret it.
INGREDIENTS
1 chicken cut into 8 pieces
1/4 pound of pancetta, cut into pieces
2 white onions, sliced
2 Tbls of extra virgin olive oil
1 Tbls of butter
2 cups of white wine
1 cup of red wine
3 shallot, chopped
8 white button mushrooms or baby portabella mushrooms, sliced
3 cloves of garlic
1 tsp of dried thyme
1/4 cup of fresh parsley, chopped
2 bay leafs
1 tsp of salt
1/2 tsp of fresh ground black pepper
1 tsp of sugar
PREPARATION
In a Dutch oven sauté the pancetta until crisp.
Remove from pan and set aside.
Sauté the onions for 3 minutes.
Remove from pan and set aside.
Add the oil and butter to the pan.
Brown the chicken on all sides a few pieces at a time.
Return all the pieces of chicken to the pan.
Add the shallots, mushrooms, garlic, parsley, salt, pepper, onions, sugar and bay leafs.
Pour in the red and white wine.
Stir everything together and bring to a boil.
Lower the heat and simmer for 60 to 90 minutes.
Stir in the pancetta and serve.
